Aspire Lifestyles - 5 minutes with Chef Sebastien Lepinoy

Les Amis has not only established itself as a fine dining icon in sunny island Singapore, but also come a long way in clearing the path for the French dining scene since 1994. As the flagship restaurant of the Les Amis Group family, the award winning Les Amis presents an exquisite French dining experience combined with an extensive range of fine wines and impeccable service.

Since taking over the reins in 2013, Chef Sebastien’s unique style and creativity of fusing classic French techniques with a touch of modern aesthetic has taken the restaurant from strength to strength. In 2016, Les Amis was awarded two-Michelin stars and ranked No. 12 on Asia’s 50 Best Restaurants.

Aspire Lifestyles: Chef Sebastien, having lived in France, Hong Kong & Singapore, which is your favourite country and why?

Chef Sebastien: To be honest, I don’t have a favourite country or city to live in. Every city comes with its fair share of ups and downs. However, my heart will always belong to France. France is my home, it’s where I grew up and carries all of my childhood memories which are priceless. 

Aspire Lifestyles: Can you share with us what’s on your Top 3 list of ‘must-do’ whenever you return home to France?

Chef Sebastien: My 3 favourite things to do whenever I return there is, of course, food related! There’s also quite a bit of traveling required to get to it all…during spring time, I would enjoy seafood in Bretagne which is a coastal area of France. In winter, I’d love a good choucroute in Alsace as it’s such a delicious and hearty dish. In my hometown, Cantenay Epinard, I would collect mushrooms in the forest during autumn and prepare them for my family so we can enjoy a nice meal at home together.

Aspire Lifestyles: Last but not least, how do you envision Les Amis to grow in 2017?

Chef Sebastien: I hope that in the next 5 years, Les Amis will become synonymous with classic French cuisine in Asia. To me, classic French cuisine is like a crisp white shirt, understated, but oozing style and sophistication.
